(Recipe) The Waffle Carrot Cake

Carrot cake is a dessert you likely turned your nose up at while you were a child. But one day you tried a tentative slice and fell full force for its perfect blend of sweet and savoury flavours and soft spongey interior and never looked back.

In Torill’s home, carrot cake has been a favourite for special occasions since her children were young, today they still ask for her carrot cake for all of their birthdays and celebrations. But what’s better than a homespun carrot cake recipe? A Carrot Waffle Cake, with all the amazing taste of a traditional carrot cake (cream cheese included) and the light fluffy texture of Torill’s Table Norwegian waffles.

To make this mouth-watering treat you will mix all your wet ingredients together into a bowl before adding Torill’s Table Original or Gluten-Free Waffle & Pancake Mix. Finally, add the cinnamon, and grated carrots.

What we love about this recipe is how easy it is and how little time it takes to make the batter! The dry ingredients are already perfectly blended for you and all the components can be added to one large bowl. Can we say ‘heck yes’ to fewer dishes?!

Carrot Cake Waffle Base

 Serving size - Approx. 8 Waffles

Ingredients

  • 2 cups waffle mix
  • 1/2 L buttermilk
  • 2 eggs
  • 1 cup finely grated carrots, densely packed
  • 1 tsp cinnamon
  • 1/4 cup melted butter

Directions

  1. Follow the directions on your bag of our Original or Gluten-Free Mix (but don't add any water into your batter)
  2. Add the cinnamon
  3. Mix in the grated carrots
  4. Ladle into your Norwegian style waffle iron
  5. After waffles are cooked, let them cool down before stacking them layers of cream cheese icing

Of course, no carrot cake is complete without the smoothest cream cheese icing. Carefully crafted to perfection, this cream cheese icing will have you licking the spatula after you’ve iced your creation. Don’t lie, you do it too!

Cream Cheese Icing 

Ingredients

  • 85 grams cream cheese
  • 1/2 cup softened butter
  • 1 tsp vanilla
  • 3 cups icing sugar

Directions

  1. Beat cream cheese and softened butter together until smooth
  2. Add the vanilla
  3. Slowly beat in icing sugar until there are no clumps or lumps in the icing
  4. Apply generously!

Serve this recipe as a multi-layer cake by stacking the waffles between layers of icing, or enjoy them as adorable heart-shaped sandwiches. Both ways will satisfy your sweet tooth and delight at your next special occasion.
