Ingredients

1 ¾ cup Torill’s Table Gluten-Free Waffle & Pancake Mix

3 eggs, large

2 tbsp cocoa powder

½ cup pureed beets OR 1 tbsp red food colouring

400 mL buttermilk
-
(50 g) granulated sugar
-
½ tsp ground cinnamon
-
½ cup melted butter, cooled
-
1 tsp baking soda

Butter, for cooking
Directions
Preheat the waffle maker.
Mix together the eggs, buttermilk, pureed beets (or red food colouring) into one bowl. In another bowl, add the waffle & pancake mix, cocoa powder, granulated sugar, ground cinnamon and baking soda.
Mix the egg/beet/buttermilk mixture into the dry ingredients until it is fully incorporated with no streaks of plain batter or butter.
Add the melted butter into the batter and mix until fully combined.
In the preheated waffle maker, brush the inside with butter and pour ¼ cup of the batter into the waffle maker.
Let it cook for 4 minutes on medium heat or until the waffle maker beeps, indicating that it is fully cooked.
Place the cooked waffle onto a plate or cooling rack.
Repeat steps 5-7 until all the batter has been cooked.
Add your desired toppings (goes well with a cream cheese icing) and enjoy!
