GLUTEN-FREE SWEET POTATO BELGIAN WAFFLES
1 ¾ cups (500 mL) Torill’s Table Gluten-Free Waffle & Pancake Mix
1 ¼ cups (587 mL) buttermilk
1/8 tsp ground nutmeg
¼ tsp ground cinnamon
cup (236 mL) sweet potatoes, cooked and mashed
2 eggs, large
¼ cup (59 mL) butter, melted and cooled
Waffle maker (with Norwegian waffle mould)
Preheat the waffle maker. Pro-tip:go one setting higher than your usual setting to cook the waffles evenly and have a nice, golden brown colour.
Mix together the eggs, buttermilk and mashed sweet potatoes together in a mixing bowl and set it aside.
Add the mix, cinnamon and nutmeg into another mixing bowl and whisk it together.
Add the wet ingredients into the dry ingredients bowl and mix until just combined.
Add the cooled melted butter into the batter and mix until the butter is incorporated.
Brush the preheated waffle maker with butter and add 1/3 cup of batter into the maker.
Let it cook for 4 minutes or until it is golden brown.
Repeat steps 6 & 7 until all the batter are cooked.
Serve it up on a plate and enjoy!
