Ingredients: 255 g (2 cups) Torill’s Table Original Waffle & Pancake Mix; 2 eggs, large; 500 mL (1/2 L) buttermilk; 1/8 tsp ground nutmeg; ¼ tsp ground cinnamon; 300 g (1 cup) sweet potato, cooked and mashed; 60 mL (1/4 cup) melted butter, cooled

Ingredients

255 g (2 cups) Torill’s Table Original Waffle & Pancake Mix
2 eggs, large
500 mL (1/2 L) buttermilk
1/8 tsp ground nutmeg
¼ tsp ground cinnamon
300 g (1 cup) sweet potato, cooked and mashed
60 mL (1/4 cup) melted butter, cooled

Waffle maker (with Norwegian waffle mould)

Method

Preheat the waffle maker on number four (or medium-low heat).
Mix together the eggs, buttermilk and mashed sweet potato together until it is combined. Set it aside.
Combine the waffle & pancake mix and ground nutmeg and mix together.
Add the dry ingredients into the sweet potato/egg/buttermilk mixture and mix until it is fully combined and no streaks of dried mix is found.
Add the cooled melted butter and mix until the butter is fully incorporate.
Into the preheated waffle maker, brush it with butter and add ¼ cup of the batter into the waffle maker.
Let it cook for 4 minutes or until it is fully cooked.Pro-tip:your waffle maker will start beeping once it is finish cooking the waffle. If it is not cooked enough, let it cook for another minute or two.
Remove the waffle out of the waffle maker and put it onto a plate or a cooling rack.
Repeat steps 6-8 until all the batter has been cooked and became waffles.
Add your desired toppings and enjoy!
