Pumpkin Spice Waffle Cake

2 eggs
2 cups buttermilk
2 cups mix
1 tsp pumpkin pie spice
1 cup canned mashed pumpkin
1/4 cup melted butter/coconut oil

Gluten Free

3 eggs
2 cups buttermilk
1 3/4 cup mix
1 cup canned mashed pumpkin 
1 tsp pumpkin pie spice
2 tbsp melted butter/coconut oil
Preheat waffle maker. Whip eggs in a large bowl. Add buttermilk, mix and pumpkin pie spice, and stir well. Then add the cooled melted butter or coconut oil. Let sit for a few minutes, them spoon into waffle maker and cook until done, about 5 mins.
When cool, layer with cream cheese icing. Top with toasted pumpkin seeds and serve.
